Greek Yoghurt snacks

So I got a little excited with the Greek yoghurt the other week when it was on sale and apparently I bought more than I could eat! Now that the use by date is fast approaching, I definitely don’t want to waste any of the yoghurts, so I have been using them in any way I can. Here are a couple of things I have been whipping up:

Breakfast Smoothies

  • 170g protein yoghurt
  • 1/2 cup oats
  • 1/2 banana
  • 4 strawberries
  • handful blueberries
  • squeeze honey
  • almond milk

Blend and enjoy!

 

 

Oat and yoghurt muffins

  • 1 cup flour
  • 1 1/2 cups oats
  • 1 tsp cinnamon
  • 2 tsp baking power
  • 1/2 cup brown sugar
  • 1 tub 170g protein yoghurt
  • 1 banana
  • 1/2 cup milk
  • 1/4 cup olive oil
  • 1/2 cup blueberries

Pre-heat oven to 170 degrees and line a muffin tray with patty pans. Combine all ingredient and divide into 12 muffins, back for 15mins.

 

Pancakes

  • 1 cup flour
  • 1 tub 170g protein Greek yoghurt
  • 1 1/2 tsp protein powder
  • 1 tsp chai seeds
  • 2 eggs
  • 1/2 cup blueberries

Combine all ingredients. Cook in a pre-heated fry pan, until golden brown.
