A twist on the classic banana bread, this delicious snack will quickly become your favourite way to use up those old bananas.
Now don’t get too excited, this isn’t a super healthy snack, but compared to the store bought banana breads, it’s a much better alternative. Anything you make yourself is always going to be a better option than something store bought. You can control the sugar content and always change up the recipe to suit your diet.
Coconut banana bread
- 2 Large bananas mashed Overripe
- 1/2 Cup Caster sugar
- 2 Eggs
- 1/2 Cup Olive oil
- 3/4 Cup Coconut milk
- 1 Tsp Vanilla essence
- 1 1/2 Cups Wholemeal flour
- 1 Cup Shredded coconut
- 2 Tsp Baking powder
Pre heat oven to 180 degrees and line a loaf tin
In a bowl, mix together banana's, sugar, eggs, oil, coconut milk and vanilla
In a separate bowl, mix together flour, shredded coconut and baking powder
Combine mixtures and pour into loaf tin
Bake for 50mins or until skewer is inserted and comes out clean
Delicious toasted or warmed with butter!
