Don’t throw away those brown bananas! Make cookies!!
Banana oat cookie
- 2 Overripe bananas
- 1 1/2 Cup Rolled oats
- 1/4 Cup Pumpkin and sunflower seed mix
- 1/4 Cup Shredded coconut
- 1/4 Cup Dried cranberries
- 1 Tbsp Chia seeds
- 1 Tbsp Honey
Preheat oven to 180 degrees Celsius and line a baking tray with baking paper
Mash bananas in a bowl with a fork until smooth
In a separate bowl combine all other ingredients
Add the bananas, combine, and chill in the fridge for 15mins
Once mixture has chilled, use a spoon and scoop spoonful's of the mixture onto baking tray
Bake in the oven for 20mins, then cool on a baking tray
Biscuits are moist and can easily fall apart, ensure you dry them out properly on the cooling rack. Biscuits can be frozen.
