My 2 favourite slow cooker recipe…

If you don’t have a slow cooker, you need one! I bought mine from Target years ago for about $79 and it’s still going strong. It’s really easy to use, let’s you utilise cheap meats and leaves everything super tender. The best part, it’s set and forget… I throw everything in before I start work and come home to a delicious, perfectly cooked meal.

Slow cooker beef

Ingredients

  • 1 Kg Chuck steak Cut chunky
  • 2 Carrots Chopped in chunks
  • 1 Potato Chopped in chunks
  • 2 Can Crushed tomatos
  • 2 Stalks Celery Chopped in chunks
  • 1/4 Cup Worcestershire sauce
  • 1 Tbsp Crushed garlic
  • 3 Tbsp Tomato paste
  • 1 Tbsp Thyme
  • 1 Cup Water or beef stock
  • Salt and pepper
  • 1 Cup Frozen peas

Instructions

  1. Combine everything except frozen peas in the slow cooker

  2. Cook on low for up to 8hrs

  3. For the last 5mins add the frozen peas

  4. Serve with pasta, rice or mashed potato

Slow cooked roast chicken

Dreaming of a roast chicken dinner but don’t have the time? Put it in the slow cooker..

Slow cooker roast chicken

Ingredients

  • 1 Whole free range chicken
  • 1 Tbsp Olive oil
  • 1 Tsp Paprika
  • 1 Lemon
  • Salt and pepper
  • 2 Cups Water

Instructions

  1. Put whole chicken in the slow cooker

  2. Coat in olive oil, paprika, salt and pepper

  3. Put lemon into cavity 

  4. Add water and set on low for 7 hours

  5. After cooking, you can put chicken into hot over for 15 mins to crisp the skin
