Homemade muesli bars

It’s raining and cold outside today, so we decided to stay indoors and do some baking… Odin and I whipped up these delicious muesli bars.

Muesli Bars

Delicious, healthy, easy, muesli bars... 

Ingredients

  • 1 1/2 Cup Rolled oats
  • 1/2 Cup Pumpkin seeds
  • 1/2 Cup Sunflower seeds
  • 1 Cup Almonds Roughly chopped
  • 1 Cup Pitted dates or prunes Finely chopped
  • 1/2 Cup Dried cranberries or sultanas
  • 3/4 Cup Nut butter
  • 1/2 Cup Honey

Instructions

  1. Pre-heat oven to 180 degrees, line baking tray with baking paper

  2. Put oats, sunflower seeds, pumpkin seeds and almonds on baking tray and bake for 15mins, mixing occasionally

  3. While the dried ingredients are baking, put the honey and nut butter in a small saucepan over a low heat. Slowly heat, stirring constantly, until mixture goes runny. 

  4. Put the dates, cranberries and warm nut butter and honey into a big mixing bowl. Add the oat mixture and combine well.

  5. Place mixture into a lined baking pan, bake in over for 10mins. Then allow to cool and put into fridge to set for an hour.
