This cake is deliciously moist, with an added hit of protein… I like to eat it slightly warmed with a little bit of butter. Enjoy!
Blueberry Protein Cake
- 3 Free range eggs
- 80 Grams Coconut sugar
- 100 Grams Almond Meal
- 1 Scoop Vanilla Protein
- 3 Tbsp Plain flour
- 2 Tsp Baking powder
- 180 Grams Greek yogurt
- 1 Small lemon Zest and juice
- 1 Punnet Fresh or frozen blueberries
Whisk eggs and sugar until well combined
Add all ingredients (except blueberries) and mix to combine
More batter into lined cake tin and sprinkle blueberries on top.
Put into 180 degree oven for 50 mins or until cooked.
